CONTENT CREATION FROM THE

COMFORT OF HER KITCHEN

What started as a creative outlet for a young South African woman

living in France has turned into a full-time business built on food,

photography, and content creation.

Mariza Ebersohn, originally from Rouxville in

the Free State, has spent the past few years

developing healthy recipes, growing an

online following and working with clients –

all from her own kitchen.

“I studied BS Consumer Sciences at Kovsies. I am a French

citizen and can speak French pas mal. I am super passionate

about healthy eating and believe that food can be one of the

best tools to heal your body,” Mariza shares. “I love coffee, and

running is definitely a passionate free hobby and therapy of

mine.”

Mariza’s food journey began unexpectedly, shortly after

she got married and relocated to France with her husband,

Robert, just a day after their wedding. The move, which

she says was done with just one suitcase, forced her into

unfamiliar territory, culturally and personally.

“I arrived in France, a country where the food culture was

just so different, and never before have I really cooked at all. I

loved watching my mom, that’s for sure. And I missed home

so much in the beginning, that was kind of the spark for

me. Calling my mom for recipes I was nostalgic about, it was

about just creating meals that kind of comforted us both in a

foreign country.”

The combination of homesickness, curiosity, and the need

to adapt led her to the kitchen. Over time, that exploration

turned into something more structured. “After eight years in

France, raising two kids with my husband without family has

really taught me to be resilient and innovative. Therefore, my

love for food creation and food recipes came into being.”

Unable to work legally when she first arrived in France, Mariza

started a food blog to pass time. “I was bored out of my mind.

There are just so many hours in the day for exercise and

cleaning the house. Apart from learning French, I needed a

creative outlet! So I decided to kind of make a food diary in a

sense. Diving deep into the French culture of local and fresh

produce, I absolutely thrived!”

To improve the quality of her content, she taught herself how

to take photos and create videos, and began studying social

media closely. “I invested in a better camera and lenses. That

all has evolved into my day job and blog today. I went to the

local markets as much as possible and also learned more

about French cuisine from my ‘French grand-ma’ I was lucky

to have in my life at the time.”

Now back in South Africa, Mariza balances content creation,

recipe development, and parenting. She says planning is

essential to staying on track.

“I always try to plan the week – write out my schedule for

the week … from the recipes I will be making and how I can

incorporate those healthy meals into our day. Some days

that isn’t the case, as life gets crazy now and again! I try to

incorporate at least one healthy meal that suffices during the

day, so I know at least my kids and hubby get some good

nutrients, even if it’s just one meal. Focusing on whole foods

as much as possible and eliminating most processed foods,”

she says.

“I am the only one who doesn’t eat any animal products in my

home, but I still cook for everyone’s needs. They still eat my

food even though they don’t always know that it is healthy!”

A typical day starts after school drop-off. “I go for a run or

workout at home and then work all morning doing recipes

and videos for clients or bake up some treats that I sell until

I have to go and pick them up. At this point in time, they will

be more involved with relaxed content. I am very particular

about social media. I like to protect them as long as I possibly

can.”

Mariza gets inspiration from multiple sources. “Pinterest, social

media, is a big inspiration as well, and sometimes I just go

with the flow and let the creativity take over.”

Her comfort food leans more towards sweet. “I have a sweet

tooth. Warm baked bread. A warming chocolate oat bowl

with nut butter, cacao nibs, and blueberries, and date syrup –

plus you can never go wrong with melkkos or hot chocolate!”

out of it, and no

more waiting.

One of the most fulfilling parts of her work has been building

a connection with her audience.

“The community has really been so helpful to me, women

reaching out and asking for advice on how to eat better,

and people who are enjoying and making my recipes. Also,

seeing my content on my clients’ sites and social media. After

so many years of not being able to work and express my love

for food, being asked instead of reaching out has become a

milestone in a sense. I have had so many no’s in the past.”

Her work has also led to product development and live

events. “This has also pushed me to go beyond my character

for more growth by hosting food demos, and selling my

plant-based food products like vegan rusks, sugar-free and

gluten-free cakes, etc., it’s been going well.

“I am so proud of how far I have come!”

Despite the success, Mariza had her share of behind-thescenes

challenges too. “I remember standing on tables with

a big pregnant belly, taking shots of food with my husband,

patiently waiting for me to take shots or finish so he can eat

… Now I get to make a career out of it, and no more waiting,”

she laughs.

To others interested in blogging or food content, her advice:

“Do what you know and be authentic. It’s easy to ‘steal’ ideas

these days, everything is ‘free’, but truly owning your art and

talent is something completely different and honest. Anyone

can copy and paste a recipe, but the truly good recipes are

those that people have made and tweaked as their own,” she

shares.

“If you love cooking and want to portray it, just do it your

way. People will appreciate it. Start small. Start off with a free

website. Buy a second-hand camera. Teach yourself the basics,

and when the foundation is set, layer up on the next level to

become great!”

TASTE FOR LIFE

As a young man, he learned the true meaning of hard work and perseverance

as a dishwasher, working long hours standing on a plastic crate just so he

could reach the plates. Today, he has taken over from his father by heading up

five Spur branches in Bloemfontein.

John-Louis de Jesus shares what it means to

have a taste for life and how Spur has shaped

Bloemfontein’s food industry over the years.

He invited Get It to Alabama Spur in Mimosa

Mall, where he shared how the brand has

evolved since his father started in 1977. He explained

that his father was given the opportunity to own a

franchise by the founder of Spur and the first restaurant

was opened across Hoffman Square in the CBD. “It was

called the Alabama Spur. This name still exists at the

restaurant in Mimosa Mall today. Mr Ambor trained my

father himself, a passionate man that was obsessed with

client service and having a great vibe,” he expresses.

His father had his own way of doing business and the

mentorship he received from the founder was a recipe

for success. “There are many secrets to our sauce, but his

fundamental belief was that you have to welcome each

and every guest as if you are serving your own family, if

that is your guideline, you will always be warm, do what

is right, give your best and make them and yourself

proud,” he recalls.

When asked how it was for him to learn the way of

business throughout his childhood, John’s face lit up as

he remembered his first shift, the shift that made him

decide that he wants to learn more about the business.

“I still put on an apron and do it sometimes, just for the

memories. But perhaps my first shift was even before I

was born, as my mother was highly pregnant with me

and also in the kitchen making calamari and crumbed

mushrooms most nights. We all pitched in to make a

dream possible.”

This foundation is true to what Spur stands for as

a brand, and for John, family is at the heart of Spur.

Clients who were once kids riding on the Spur roller

coaster, now bring their parents and grandparents for

a Mother’s or Father’s Day to say thank you. “I see my

young clients are now in our stores with their children,

making memories, sharing a delicious meal, playing

with friends in our play areas, having their faces painted,

celebrating birthdays and special moments.

“It fills our hearts with joy,” he says.

The brand itself has evolved, just like many customers

have but what he says remains consistent over the years

is that Spur will always be part of being South African.

His father went against all odds and took the risk to

innovate the kids’ play area when it was just a Steak

House. The first kids’ play module in Spur history was at

the Burning Spear in Bloemfontein. “It was an overnight

success, this was revolutionary and it elevated Spur to

the ‘Official restaurant of the South African family’, a title

that makes us gleam with pride,” he says.

Although he can’t let us in on all the secrets, he says

keeping the traditions of what made the business a

success still proves to be favourable in a digital age. “We

still do all our check sheets and count on paper with

pencil … We know we live in a digital age, and we have

modern systems that we use next to the old ways, but

sometimes the old ways cannot be beaten. This is just a

small tradition we keep.”

Apart from being an owner, John is in charge of the

day-to-day running of Spur branches in Bloemfontein.

He also serves as a consultant on several bodies for Spur

Corporation, for example, the Menu Committee, as well

as heading up Operations for the group’s other divisions

like fuel and logistics.

So then, what does it mean to have a taste for life if you

wear many hats in the business? For John, the answer

is easier than choosing his favourite meal on the menu

(Spur Pepper Burger, with Chips and Onion Rings).

It is about doing everything with joy and energy.

“It is to be grateful and excited for the opportunities

God grants us every day and to go for it bravely and

with a cheeky smile on our face and confidence in your

chest, even when the moment might seem daunting,”

he expresses.

A SLICE OF MARGARET LINSTRÖM’S

famous sourdough bread

For Margaret Linström, baking sourdough bread is filled with nostalgia.

Memories of how she waited in anticipation for a steaming slice from her Auntie

Jane always comes to mind when she thinks about her love for baking bread.

This sourdough starter recipe will help you create your own

sourdough starter from scratch at home in seven easy steps.

Your starter is the cornerstone of great bread – once you have it

showing consistent signs of fermentation each day, which takes on

average 5 to 7 days, you’re ready to start baking sourdough bread!

Ingredients

300 g all-purpose flour

400 g whole-grain rye flour

800 g water

Method

Day one

To a clean jar, add 100g whole rye flour and 125g warm water. Mix

ingredients and keep somewhere warm for 24 hours.

Day two

To a clean jar, add 75g of the mixture from Day One (discard the

rest), 50g whole rye flour, 50g all-purpose flour, and 115g water.

Mix ingredients and keep somewhere warm for 24 hours.

Day three

To a clean jar, add 75g of the mixture from Day Two (discard the

rest), 50g whole rye flour, 50g all-purpose flour, and 115g water.

Mix ingredients and keep somewhere warm for 24 hours.

Day four

On day four, you will give the mixture two feedings. In a clean

jar, add 75g of the mixture from Day Three (discard the rest), 50g

whole rye flour, 50g all-purpose flour, and 115g water. Mix and

let rest for 12 hours. In the evening, after 12 hours, repeat the

discarding and feeding you did in the morning. Let the mixture

rest overnight.

Day five and six

For days five and six, continue to discard down the jar contents

and then feed with the same ratio of ingredients as Day Four, twice

a day. You can use the same jar for these feedings.

Day seven and onward

In the morning on Day Seven, discard the jar’s contents down to

20g of the mixture and add 30g whole rye flour, 70g all-purpose

flour, and 100g water.

Repeat this feeding once a day, indefinitely.

Sourdough bread with all-purpose flour

(adapted from theperfectloaf.com)

This recipe is for an easy loaf of healthy

and nutritious sourdough bread made

with all-purpose flour – all made in one

day.

460g all-purpose flour

340g water

9g salt

92g ripe sourdough starter

Mix at 09:00

Add the Main Dough ingredients,

reserving 50g of water, to a mixing

bowl and mix with wet hands. Mix and

strengthen the dough for 2-5 minutes,

pinching the ingredients together and

folding the dough over itself repeatedly

until it’s cohesive and smooth. During

this time, slowly add in the 50g of the

reserved water if the dough feels like

it can handle it: it shouldn’t be soupy

or extremely wet, if it is, don’t add the

remainder of the reserved water.

Bulk fermentation at 09:15 to 12:45

This dough will need 4 to 5 sets of stretch

and folds during bulk fermentation,

the first set 30 minutes after bulk

fermentation begins. Perform the rest of

them at 30-minute intervals as needed.

After the last set, let the dough rest the

remainder of bulk fermentation.

Pre-shape at 12:45

Lightly flour your work surface and scrape

out your dough. Lightly shape the dough

into a round shape. Let the dough rest for

20 minutes, uncovered.

Shape at 13:05

Shape the dough into a round or oval

shape, then place the dough in proofing

baskets.

Proof at 13:15 to 15:45

Cover the proofing basket entirely and let

it sit out on the counter for 2 to 4 hours,

temperature depending.

Bake at 15:45, preheat oven at 15:00

Preheat your oven with a baking surface

or Dutch oven inside to 230°C.

When the oven is preheated, score it, and

transfer it to the preheated baking surface

or Dutch oven. Bake for 20 minutes.

After this time, remove the lid (if using a

Dutch oven) and continue to bake for 30

minutes longer. Let the loaves cool for 2

hours on a wire rack before slicing.

Adding warmth to Winter ... peppery radishes, fiery

coloured flowers and red heart shaped leaves

If you are looking for a little culinary heat, grow radishes in a deep window box

on a sunny windowsill or any sheltered, sunny place. Radishes need warm soil

for germination so positioning is important. A good option is a Gusta Garden

planter with cultivation hood so that growth can be started in a sunny room

indoors. The hood provides a warm, moist microclimate and when temperatures

rise the planter can be taken outdoors.

Radishes grow so fast that it’s a great way to get kids excited about gardening

and growing their own food. Seeds germinate in three to eight days and are

ready for picking from three weeks. The nicest radishes are pulled before they are

fully grown. Regular watering will produce crisp, tasty radishes but water in the

morning so that the leaves are dry by the evening.

Try these:

• Radish Cherry Belle is the perfect quick nibble or salad ingredient. This cherry

red radish has snow white flesh.

• Radish Sparkler is round in shape with a deep red colour and a distinct white tip

covering the lower part of the root. It is crisp, juicy and solid.

• Radish Watermelon has crunchy white flesh with bright pink to magenta centre.

When cut the radishes look like tiny watermelons. The flesh has a mild slightly

sweet flavour. Slice thinly to display their vibrant colour.

We’re planting …calibrachoa Bakari for its fiery, flame

coloured flowers that spill over hanging baskets and

containers. It’s warm on the eye, just what’s needed

to brighten the patio. This vigorous calibrachoa grows

into a mounded and trailing plant, 25 to 40cm high

and wide. Make sure it gets plenty of sun to bring out

its full colours and keep it sheltered from draughts.

Keep the soil lightly moist and feed monthly with a

liquid fertiliser for flowers.

Garden tasks for July

• Prune bush roses from middle July.

• To prevent frost damage or disease, water plants in the

morning so that the leaves are dry by evening.

• Water spring flowering bulbs once a week for at least

40 minutes.

• Cover tender shrubs, flowers and veggies when frost

is predicted,

• Strengthen veggies to withstand the cold by feeding

with a liquid kelp fertiliser.

Indoor plant

of the month

Alocasia Red Secret is

one of the more unusual

members of the ‘elephant

ear’ family. The large

heart-shaped leaves have

a metallic bronze glow, but

its secret is the burgundy

red under leaf. It is easier to grow than

it looks and its strong point is that it

adapts to different light conditions,

growing faster with bright light and

slower with low light. Water when

the soil feels partially dry. This unusual

Alocasia originates from Asia and

Eastern Australia and is found beneath

the forest canopy.

There’s something really special about a staycation.

You get to experience all the joys of travel, without

having to drive too far. And we think the perfect

- and we do mean perfect - spot for a weekend

(just) out of town is De Oude Kraal Country

Estate and Spa. There’s just so much

to enjoy at this brilliant

estate, which is at the

centre of a 3000 hectare

working merino sheep farm.

The spa

Could there be anything more enjoyable after a long week than

a full body massage? We think not. The award-winning spa - set

in the gardens - has single and double treatment rooms, where

you can lie back and relax with a massage, facial, or wrap. There

are all the treatments you expect - manis and pedis and waxes -

as well as a Swedish and infra-red sauna, a steam room, pool and

Jacuzzi. Packages and journeys, too ... well worth pre-booking.

The activities

There’s something for absolutely every guest.

From an hour long horse ride with a guide to a

half hour hand-led ride for the children to bird

watching, and clay pigeon and .22 shooting.

There are mountain bike and hiking trails,

a sheep farm tour - two hours on the farm

bakkie - besides sheep, the farm has cattle,

horses, chicken, pigs ... it’s the most marvellous

two hours for children. There are also eco farm

runs and sundowner drives and farm safaris,

where you can look out for the Springbuck,

Blesbuck, Sable, Njala and Gemsbuck, who

aren’t shy ... often grazing just outside the

rooms. The ostriches came over for a sneak

peek at us too, and there was a peacock

showing off his fine colours on our veranda for

much of our stay.

Let’s talk food. It is the highlight of a venue where highlights are plentiful.

Owner Marie Lombard is passionate about her food, and it shows on

every plate. She’s all about using the freshest, locally sourced produce,

sustainable and ethical farming practices, simplicity done perfectly. The

four course fine-dining experience served in the main farmhouse each

evening is a treat ... we enjoyed a pork belly in a coke sauce with apple

mousse and a bacon chip to start off with, a glorious hake and mussel

seafood course with black risotto, followed by aged fillet with a nettle

sauce and slow baked lamb from the farm, along with three proper

old-school Afrikaans farmer veggie side dishes (another highlight!), and

a crème brûlée pud that finished the evening off sweetly. There’s also

an a la carte restaurant, with easy but no less impressive dishes ... if you

order a pizza, burger or salad, know it’s going to be extraordinary! A

great option if you’ve youngsters, but plan accordingly since it’s open

only from 11am to 3pm, with a three course set-menu lunch on Sunday.

You may, if you’re lucky, have your visit coincide with one of the special

events the hotel’s known for ... wine makers dinners and festivals and

special occasion celebrations. The rate includes a full, and jolly hearty,

breakfast, and afternoon tea and cakes, served at the main house daily.
