<strong>Bay</strong> <strong>Harbour</strong> News Wednesday <strong>November</strong> <strong>16</strong> <strong>2022</strong> 18 FOOD Latest Canterbury news at starnews.co.nz Coated meat for tasty meals Use sauce to enhance the flavour of meat and to help make it go further Sweet and sour chicken Serves 4 Ingredients 2/3rds cup tomato sauce, place in medium casserole dish with: ½ cup brown sugar, firmly packed ½ cup white vinegar 2 x pinches Chinese five spice 2 tablespoons sesame oil 4 large chicken breast fillets, skinless, cut into thin strips 1 tablespoon cornflour, dissolved in: 1 tablespoon cold water 1 large knob butter 1kg stir fry vegetables Directions Microwave the tomato sauce/ brown sugar/white vinegar/ chinese five spice for a minute at a time until boiling, stirring in-between. Stir fry the chicken in the sesame oil, and stir fry the vegetables in a different pan in the butter. Add the cooked vegetables to the cooked chicken, pour the sauce over them both and toss through. Pour in the cornflour/water and stir until the sauce thickens. Serve on rice or noodles. Sweet and sour meatballs Serves 6 Ingredients Meatballs: Up to 750gm mince, place in mixing bowl with: 1 Egg 1 packet onion soup mix Pepper Cornflour (to roll meatballs in) Olive oil Directions Mix mince/egg/soup mix/ pepper. Roll into balls and roll in cornflour. Fry in oil, browning all sides and cooking meatballs through. (Can be baked in the oven – place in oven dish that has been lined with non-stick tin foil and coated with olive oil, liberally WHOLESOME: Sweet and sour chicken with stir fry vegetables and noodles – add glace cherries if you wish. coat each meatball with olive oil and bake at 180 deg C for 45min. Serve the meatballs, then pour the sauce over them. This recipe should yield approximately 18 meatballs. Wine baked pork with prunes Serves 6-8 Ingredients 4 tablespoons olive oil, place in frypan 2 large onions (chopped) 4 more tablespoons olive oil Up to 1200gm pork (sliced or cubed) 24 prunes (chopped) 750ml oriental plum sauce, place in mixing bowl with: 200ml tablespoons red wine Peppercorns Directions Saute onion in first measure of olive oil, remove from pan and set aside. Heat second measure of olive oil and brown the pork, then place in large casserole dish. Place onions and prunes over top. Beat the plum sauce/wine/ peppercorns and pour over the pork/onions/prunes.
